La Baracchetta di Biagio... a Recco!
Stuff Vegetables according the Old Genoese recipe
Ingredients (for 4 persons):
100 gr of robiola (cheese) Osella
2 eggs
crumb of a sopped-in-the-milk small loaf
a twig of marjioram or a dash of oregano
2 spoons of extra virgin olive-oil
1 spoon of grated Parmigiano
vegetables such as: peppers, onions, marrows or aubergines
salt
How to prepare:
Stew just done the vegetables, drain them and cut them in the middle (onions have to be used raw). Clean out the vegetables and mince their flesh. Blend it together with the other ingredients, stir in salt and fill the vegetables.Stir in oil on a pan, range the vegetables on it and cook them at medium heat for 30/40 minutes.
